Pineapple Compote

This compote is the perfect balance of caramelised sweetness and fruitiness. The use of brown sugar and the addition of vanilla add a wonderful warmth to the recipe. Use it in dessert, cakes or even eat it just as with ice cream!


Pineapple Compote


Prep Time - 10mins

Yield - +- 300ml

Setting time - 30-45mins


Ingredients

  • 300g Fresh Pineapple

  • 100g Brown Sugar

  • 30ml Pineapple Juice

  • 5ml Vanilla

Method

  1. Cut the pinapple into small pieces. The smaller your pieces, the quicker they will cook down. You can also use tinned pineapple if you want, you may need to reduce the amount of sugar.

  2. Add the pineapple, sugar, juice, and vanilla to a small pot over medium heat.

  3. Bring to the boil and boil for 2 minutes

  4. Cook the compote until all the sugar is dissolved and the pineapple pieces are nice and soft.

  5. Remove from the heat and allow to cool.

Notes

You can check your final consistency by dropping some of the compote on an ice cold plate.


Feel free to blend the compote and pass through a sieve if you want a pineapple coulis.


Store in an airtight container in the fridge until needed
